Excerpt from Agricultural Cooperation in Denmark In tracing the development of the Danish dairy industry due credit should be given to the introduction of the mechanical cream separator. The first cream separator was introduced in 1878 by the inventor, L. C. Nielsen, followed by Doctor De Laval's cream separator the next year. They came at a most opportune time and introduced new technical methods in dairying which enabled the smaller farmers to combine their milk production, and manufacture a standardized quality for export. Excerpt from Denmark's Livestock and Meat Industry Denmark has a population of million of which about 11 percent are engaged in farming. Although agriculture accounts for only 11 percent of the gross national product, two-thirds of the farm output (mostly livestock products) is exported. Danish agriculture is based on an intensive, mixed type of farming. About 90 percent of the plant production is used as feed in the production of milk, meat, eggs, and other livestock products. Livestock and meat products, excluding dairy and poultry products, account for about 45 percent of the total gross farm income. Dairy and poultry products account for some 35 percent of the gross income. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Excerpt from Care and Feeding of Dairy Cattle, Vol. 67 The foregoing explains why the average yield of wheat per acre in Denmark is 42 bushels, England 32, and on this continent less than 20. An important item is the low cost of freight on concentrated products like butter and cheese having much value in small bulk. Labour is distributed evenly through out the year, winter as well as summer. Another advantage connected with dairy-farming is the steady market available and the certainty of returns. Market prices for dairy products vary but little from year to year. Dairy products are food necessities, while some farm products are more or less luxuries. Moreover, the market is close at hand. There is no market like the home market, and that is very far from being supplied by home production. Although returns at any one time are not large, they are coming in the whole year through. Thus intelligent dairy-farming is not at all speculative, but is essentially safe farming. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. How and why does Denmark have one of the richest, most equal, and happiest societies in the world today? Historians have often pointed to developments from the late nineteenth century, when small peasant farmers worked together through agricultural cooperatives, whose exports of butter and bacon rapidly gained a strong foothold on the British market. This book presents a radical retelling of this story, placing (largely German-speaking) landed elites—rather than the Danish peasantry—at center stage. After acquiring estates in Denmark, these elites imported and adapted new practices from outside the kingdom, thus embarking on an ambitious program of agricultural reform and sparking a chain of events that eventually led to the emergence of Denmark’s famous peasant cooperatives in 1882. A Land of Milk and Butter presents a new interpretation of the origin of these cooperatives with striking implications for developing countries today.
