Excerpt from One Thousand Salads In no phase of the culinary art is genius so necessary as in the compounding of a salad. An ignorant cook can roast a leg of mutton, broil a steak, or bake a potato. By a few moments' study of any good cook-book, she can achieve a passable soup or some simple dessert, but the making of the simplest salad will betray her skill - or the lack of it. It has been said that no one who does not love to cook can ever make a good salad. Observe the difference between the restaurant compound, heavily garnished and stiffly arranged, and the epicurean dish made at the table by one who knows what he is doing! Fruit and vegetable salads only are permissible at dinner. The fish and meat salads, with the heavier mayonnaise, are suitable for luncheon, supper, high tea, and those Bohemian feasts which begin at the mystic hour of midnight. Excerpt from One Hundred One Salads Place in a shallow plate the yolk of one egg, and beat well with a silver fork. Add drop by drop, stirring constantly, about a half-pint of olive-oil. When it is thick and jelly-like cut with a tablespoonful of vinegar or lemon-juice and season with a saltspoonful of salt and pinch of cayenne. Have plate and all materials very cold. Should the egg curdle and obstinately refuse to thicken commence on another plate with a fresh yolk, and after it begins to thicken the curdled mayonnaise may be slowly added. One saltspoonful of salt and half a saltspoonful of pepper, beaten with three tablespoonfuls of olive-oil; when thick and creamy, add slowly one tablespoonful of vinegar or lemon-juice. This should never be mixed or put over the salad until the moment it is to be eaten. If liked, a teaspoonful of scraped onion can be added. Excerpt from Fifty Salads OF the many varieties of food daily con sumed, none are more important than a salad, rightly compounded. And there is nothing more exasperating than an inferior one. The salad is the Prince of the Menu, and although a dinner be perfect in every other detail except the salad, the affair will be voted a failure if that be poor. It is therefore necessary for those contemplating dinner-giving, to personally overlook the preparation of the salad if they Wish favor able criticism. Excerpt from Florida Salads If the writer can impress upon the readers of this little salad book the importance of eating salads, the writing of it will not be in vain. The addition of a pretty salad to a menu not only gives a refined, attractive appearance to the table, but is appetizing, and, I might say, almost a necessity in this climate, speaking from a health standpoint. Fruits and vegetables contain a large amount of the necessary salts required by the system, and as for olive oil, the many benefits derived from the use of pure olive oil are so great that it is considered by good authority a positive beautifier. We all know that celery and onions are soothing to the nerves. This is not a very comprehensive work, but a collection of a few practical, palatable recipes, combined, proportioned and tested by the author. It is especially written with the hope that it will be of some assistance to young housekeepers in making their meals attractive and dainty. With a few exceptions, the materials used in these salads are produced in Florida. In making salads there is a field for a great deal of originality. With a little taste and painstaking care, most attractive, and at the same time wholesome dishes may be originated. Excerpt from Salads and Sauces To become a perfect salad-maker do not attempt too much at the beginning; practise on plain salads and plain dressings for some time before you try making combina tion salads, fancy dressings, and elaborate garnishings, and you will soon become a perfect salad artist. When about to prepare a salad make up your mind just what you are going to do; then get everything on the table before you, and begin work. When your dress ing is completed set it aside until the proper moment to serve the salad arrives; then mix the salad and dressing together, and serve - the result will be very satisfactory. Should you prepare the salad half an hour before it is wanted it will not give satisfaction, as the lettuce will have become flabby and the dressing watery and insipid.
